Cut each cheddar cheese slice in half, creating four pieces. Place one half-slice of cheese on each bread slice over the honey mustard. Distribute two slices of deli turkey onto two slices of the cheese-topped bread. Layer tomato slices and a quarter cup of baby spinach over the turkey on each.

Divide bacon into two portions. Lay two strips of cooked bacon on the remaining two slices of bread with cheese. Assemble each sandwich by placing the bacon-topped halves, bacon side down, onto the turkey and spinach halves, aligning the sandwich layers.

Divide the softened butter into four equal portions. Spread one portion on the outer side of each bread slice. Heat a large skillet over medium heat. Once hot, place sandwiches into the skillet.

Toast the first side for 3 to 4 minutes until golden. Carefully flip each sandwich and toast the second side for another 3 to 4 minutes, ensuring the cheese has melted and the interior is heated through. Remove from skillet and transfer to serving plates. Serve immediately while warm.
