# Step-by-Step Guide:

01 - Preheat oven to 400°F. In a large bowl, combine chicken breast with avocado oil, garlic powder, onion powder, sweet paprika, cayenne pepper, and chili flakes. Massage the seasoning evenly into the chicken. Place on a baking tray and bake for 36–40 minutes until fully cooked. Alternatively, use rotisserie or leftover chicken if preferred.
02 - In a food processor or mixing bowl, blend gochujang, rice vinegar, lime juice, toasted sesame oil, soy sauce or coconut aminos, Greek yogurt, mayonnaise, and honey until smooth. Adjust seasoning to taste.
03 - While chicken bakes, finely dice Persian cucumbers, slice scallions, and chop fresh cilantro.
04 - Once chicken is baked, let it cool slightly, then shred or chop into bite-sized pieces. Fold the shredded chicken into the prepared sauce, then add cucumbers, scallions, and cilantro. Mix thoroughly to coat evenly.
