In a medium mixing bowl, combine Greek yogurt, key lime juice, vanilla protein powder, sweetener, vanilla extract, and lime zest. Stir together until the mixture is very smooth and homogenous.

Line a baking sheet with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly over the prepared surface, forming a thin, uniform layer approximately 1 cm thick.

Evenly scatter the crushed graham crackers, toasted coconut, and extra lime zest over the top of the yogurt layer.

Transfer the baking sheet to the freezer and chill for 2-3 hours, or until fully frozen and firm.

Remove the baking sheet from the freezer. Lift out the yogurt bark using the parchment or mat, break into manageable pieces, and enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.
