Key Lime Pie Yogurt Bark (Printable Version)

Frozen Greek yogurt bark with zesty key lime, toasted coconut, and graham cracker crunch—refreshing, protein-packed snack.

# What You'll Need:

→ Yogurt Mixture

01 - 2.5 cups (600 g) plain Greek yogurt, non-fat or low-fat; substitute with dairy-free yogurt if desired
02 - 3.5 tablespoons (52 ml) key lime juice
03 - 1 scoop (about 30 g) vanilla protein powder, dairy or plant-based
04 - 2 tablespoons (15 g) powdered Swerve or 1 tablespoon (21 g) honey; adjust to taste
05 - 1 teaspoon (5 ml) vanilla extract
06 - 1 tablespoon (6 g) finely grated lime zest

→ Toppings

07 - 1/3 cup (40 g) gluten-free graham crackers, crushed
08 - 1/4 cup (17 g) toasted unsweetened coconut flakes

# Step-by-Step Guide:

01 - In a medium mixing bowl, combine Greek yogurt, key lime juice, vanilla protein powder, sweetener, vanilla extract, and lime zest. Stir together until the mixture is very smooth and homogenous.
02 - Line a baking sheet with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly over the prepared surface, forming a thin, uniform layer approximately 1 cm thick.
03 - Evenly scatter the crushed graham crackers, toasted coconut, and extra lime zest over the top of the yogurt layer.
04 - Transfer the baking sheet to the freezer and chill for 2-3 hours, or until fully frozen and firm.
05 - Remove the baking sheet from the freezer. Lift out the yogurt bark using the parchment or mat, break into manageable pieces, and enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.

# Additional Notes:

01 - For a creamier texture, use full-fat Greek yogurt. Add toppings such as fresh berries, banana slices, nut butter, dark chocolate chips, or chopped nuts for extra variety.
02 - Store bark pieces in a single layer or separated by parchment paper to prevent sticking.
