In a medium bowl, whisk together honey, Dijon mustard, chicken broth, and cornstarch until smooth.

Heat olive oil and butter in a skillet over medium-high heat. When hot, add pork chops and sear for 3 to 5 minutes per side until golden brown.

Reduce heat to medium-low. Pour sauce into skillet and cook for 3 to 5 minutes until pork reaches an internal temperature of at least 145°F and sauce thickens.

If desired, sprinkle chopped parsley over pork chops and adjust seasoning with additional salt and pepper.
