Peel and slice carrots or substitute with bagged baby-cut carrots as desired.

Melt honey and unsalted butter together in a microwave-safe bowl until fully combined.

Place carrots into the slow cooker and pour the honey-butter mixture evenly over them. Add salt and pepper either now or after cooking, then toss to coat thoroughly.

Set slow cooker to high and cook for 3 hours or until carrots are tender. Alternatively, cook on low for approximately 6 hours.

Once tender, toss carrots gently, garnish with chopped fresh parsley if preferred, and serve warm.
