Pat boneless skinless chicken pieces dry thoroughly using paper towels.

In a small bowl, combine dried Italian seasoning, smoked paprika, salt, and black pepper.

Evenly sprinkle the spice blend over chicken pieces and toss to coat thoroughly.

Heat a large 12-inch heavy-duty skillet over medium-high heat. Add olive oil and 1 tablespoon of butter, melting the butter completely.

Arrange chicken pieces in a single layer in the hot skillet. Cook undisturbed for 3-4 minutes until golden on the first side. Flip and continue cooking for 4-5 minutes more until all sides are golden and internal temperature reaches 165°F.

Add remaining 2 tablespoons of butter and minced garlic to the skillet. Cook for 1 minute until butter melts and garlic releases fragrance. Remove from heat.

Toss chicken bites in the garlic butter sauce to coat evenly. Garnish with minced fresh parsley if desired.
