In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly mixed.

In a separate bowl, whisk together the buttermilk, beaten egg, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry mixture and stir just until combined. Allow the batter to rest for 5 minutes.

Heat a large non-stick skillet over medium heat and lightly coat with cooking spray. Pour 3 tablespoons of batter into the skillet, spreading gently. Cook for 2-3 minutes until bubbles form on the surface and the bottom is golden brown. Flip and cook for an additional 2-3 minutes until golden brown.

Transfer the pancake to a plate and immediately place a cooked sausage link in the center. Roll the pancake tightly around the sausage and set seam side down to secure.

Repeat the cooking and assembling process with remaining batter and sausage links. Serve warm with syrup either poured over or as a dipping sauce.
