# What You'll Need:

→ Dry ingredients

01 - 1 cup oat flour (90 g)
02 - ½ cup rice flour (80 g)
03 - 4 tablespoons cornstarch or arrowroot flour (32 g)
04 - 2 tablespoons coconut sugar or brown sugar
05 - 1 tablespoon ground flax seeds or chia seeds
06 - 1 teaspoon baking powder

→ Wet ingredients

07 - 1½ cups plant-based milk (360 ml), preferably canned lite coconut milk
08 - 1 small banana (80 g)
09 - ½ tablespoon lemon juice or lime juice
10 - ½ teaspoon vanilla extract
11 - Oil for frying

→ Apple filling

12 - 3 apples, peeled, cored, and chopped
13 - 3 tablespoons coconut sugar or brown sugar
14 - 2 tablespoons plant-based milk
15 - ½ tablespoon lemon juice or lime juice
16 - ½ teaspoon cornstarch
17 - 1 teaspoon ground cinnamon

# Step-by-Step Guide:

01 - Place all dry ingredients into a bowl and whisk to blend thoroughly.
02 - Blend all wet components except oil in a food processor until smooth.
03 - Pour wet mixture into dry ingredients and whisk until fully incorporated. Allow batter to rest briefly.
04 - Heat a small amount of oil in a non-stick skillet over medium heat. Pour ¼ cup batter and spread evenly. Cook 2-4 minutes until edges lift, then flip and cook 1-2 more minutes. Thin batter by adding up to 3 tablespoons (50 ml) plant-based milk if it thickens during cooking. Repeat until all batter is used.
05 - Combine apple, sugar, plant-based milk, lemon juice, cornstarch, and cinnamon in a skillet. Stir over medium heat until boiling, then reduce to low and simmer for several minutes until thickened.
06 - Spoon a few teaspoons of apple filling onto each crepe, roll up, and serve optionally drizzled with caramel sauce. Enjoy immediately.

# Additional Notes:

01 - If batter thickens after resting, gradually add plant-based milk to achieve desired consistency.
02 - Ensure crepes are cooked gently to avoid tearing; patience when flipping is key.
