04 - 1/4 cup sour cream or full-fat plain yogurt

05 - 2 1/2 cups chopped cooked turkey breast, skin removed (approximately 1 pound)
06 - 1/2 tablespoon olive oil
07 - 1 large shallot, chopped
08 - 2 tablespoons fresh parsley, chopped
09 - 2 tablespoons fresh thyme, chopped
10 - 2 tablespoons fresh sage, chopped
11 - 2 celery stalks, chopped
12 - 4 ounces frozen peas and carrots
13 - 2 2/3 cups turkey or chicken broth, divided
14 - 1/4 teaspoon kosher salt
15 - 1/4 teaspoon black pepper, or to taste
16 - 2 tablespoons cornstarch

# Step-by-Step Guide:

01 - Place diced sweet potatoes into a medium saucepan. Cover with water, add 1 tablespoon kosher salt, and bring to a boil. Cook for 16 to 18 minutes until tender.
02 - Drain potatoes and return them to the saucepan. Add 1/4 teaspoon kosher salt and sour cream or yogurt. Mash thoroughly and keep covered.
03 - Preheat oven to 375°F and position the rack in the center.
04 - Heat olive oil in a large skillet over medium heat. Add chopped shallot, parsley, thyme, and sage. Cook until fragrant and softened, about 2 to 3 minutes.
05 - Add chopped celery and cook until softened, approximately 4 to 5 minutes.
06 - Incorporate frozen peas and carrots, chopped turkey, 2 cups of broth, 1/4 teaspoon kosher salt, and black pepper. Bring to a boil, then reduce heat to medium-low and simmer for 8 to 10 minutes, stirring occasionally.
07 - Mix remaining 2/3 cup broth with cornstarch until dissolved. Stir into the turkey mixture and cook over medium-low heat for 3 to 4 minutes until thickened.
08 - Transfer turkey filling to a deep 9x9-inch baking dish or four individual 8-ounce ramekins. Spread mashed sweet potatoes evenly on top.
09 - Place the assembled dish on a sheet pan and bake for 20 minutes until heated through. Finish under the broiler for 2 to 3 minutes to develop a golden crust.
