Preheat the oven to 375°F. Use a standard 13x18 inch baking sheet. Unroll one canister of crescent dough sheets and gently stretch it to cover half of the ungreased baking sheet. Unroll the second canister and stretch to cover the remaining half with some overlap. Press seams together and pierce dough with a fork. Bake for 10 minutes until golden brown.

In a 2 to 4-quart saucepan over medium-high heat, add ground beef and stir frequently until no longer pink, approximately 5–6 minutes.

Reduce heat to medium. Stir in taco seasoning and water. Simmer for 5 minutes, then remove from heat.

Remove crust from oven. Evenly spread the taco meat over the crust, then sprinkle freshly shredded cheese on top.

Return the assembled crust to the oven and bake for 4–5 minutes until cheese is fully melted.

Distribute quartered grape tomatoes, thinly sliced green onions, and chopped cilantro evenly over the melted cheese. Drizzle with sour cream and hot sauce if desired. Serve immediately.
