Remove the stems from the strawberries and freeze until firm if not already frozen.

Place strawberries, sugar, lemon juice or zest, and a pinch of salt in a high-speed blender.

Process the mixture on high speed until a smooth consistency is achieved.

If using a high-speed blender, serve immediately. For a traditional texture, transfer the mixture to an ice cream machine and churn according to manufacturer instructions.
