Bring a medium saucepan of water to a boil. Add sago pearls, reduce heat to medium-high, and cook for approximately 15 minutes, stirring occasionally until pearls become transparent. Remove from heat, cover, and let sit for another 10–15 minutes until fully translucent.

Strain the cooked sago using a strainer, rinse thoroughly under cold water to halt cooking, then submerge the strainer with sago pearls in a bowl of cold water to prevent sticking. Set aside.

In a blender, combine prepared strawberries, evaporated milk, and condensed milk. Blend until smooth. Taste and incorporate additional condensed milk if a sweeter result is desired. Refrigerate mixture until assembly.

Drain excess water from the sago. In a large mixing bowl, gently combine sago pearls, chilled coconut milk, and strawberry mixture. Mix until evenly incorporated.

Portion into individual serving cups and garnish each with chopped fresh strawberries. Serve immediately.
