Strawberry Sago Coconut Milk (Printable Version)

01 - 360 g sago pearls
02 - 2.7 kg strawberries, washed and stems removed
03 - 530 ml evaporated milk
04 - 135 ml condensed milk, adjust to taste
05 - 720 ml coconut milk, whole fat, chilled

# Step-by-Step Guide:

01 - Bring a medium saucepan of water to a boil. Add sago pearls, reduce heat to medium-high, and cook for approximately 15 minutes, stirring occasionally until pearls become transparent. Remove from heat, cover, and let sit for another 10–15 minutes until fully translucent.
02 - Strain the cooked sago using a strainer, rinse thoroughly under cold water to halt cooking, then submerge the strainer with sago pearls in a bowl of cold water to prevent sticking. Set aside.
03 - In a blender, combine prepared strawberries, evaporated milk, and condensed milk. Blend until smooth. Taste and incorporate additional condensed milk if a sweeter result is desired. Refrigerate mixture until assembly.
04 - Drain excess water from the sago. In a large mixing bowl, gently combine sago pearls, chilled coconut milk, and strawberry mixture. Mix until evenly incorporated.
05 - Portion into individual serving cups and garnish each with chopped fresh strawberries. Serve immediately.
