# Step-by-Step Guide:

01 - Heat olive oil in a skillet over medium heat. Add sausage, crumble it, and cook until browned. Drain excess fat.
02 - Transfer browned sausage to slow cooker. Add lentils, onion, carrots, celery, garlic, diced tomatoes, chicken broth, thyme, oregano, smoked paprika, bay leaf, salt, and pepper.
03 - Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until lentils and vegetables are tender.
04 - Remove bay leaf. Stir in fresh spinach if using; allow to wilt for 2 to 3 minutes.
