# Step-by-Step Guide:

01 - Heat olive oil in a large Dutch oven over medium-high heat. Add sausage and cook for 5 minutes, breaking it apart with a wooden spoon until browned. Remove the sausage and set aside.
02 - Add diced onion, celery, and carrots to the pot. Cook for 5 minutes until vegetables soften, stirring occasionally. Add minced garlic and cook for 1 minute more.
03 - Add two cans of white beans, Parmesan rind, Italian seasoning, kosher salt, black pepper, and crushed red pepper flakes to the pot.
04 - Pour in chicken broth and bring the mixture to a boil. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
05 - Remove the Parmesan rind. Use an immersion blender to partially puree the soup, leaving some texture. Alternatively, blend in batches using a blender or food processor and return it to the pot.
06 - Return sausage to the pot. Add the remaining can of beans, chopped kale, lemon juice, and parsley. Cook for a few more minutes, then stir in grated Parmesan cheese. Adjust seasoning to taste.
