Grease an 8x8-inch baking pan with butter and set aside.

In a large non-stick saucepan, melt the butter over medium-high heat. Once melted, add 1 and 1/2 bags of mini marshmallows, stirring continuously until fully melted and smooth. Stir in vanilla extract.

Remove pan from heat and immediately fold in the crushed Ritz crackers. Stir in the remaining 1/2 bag of mini marshmallows until just incorporated.

Quickly fold in the unwrapped Rolo candies, ensuring even distribution throughout the mixture.

Spread the mixture evenly into the prepared pan using a buttered spatula. Press additional Rolo candies on top if desired. Allow to cool completely.

Once cooled, cut into squares. Serve immediately or store in an airtight container for up to one week.
