Mediterranean Spinach Grilled Cheese (Printable Version)

A golden toasted sandwich with spinach, feta, mozzarella, sun-dried tomatoes, and olives.

# What You'll Need:

→ Bread

01 - 4 slices sourdough bread

→ Vegetables

02 - 2 cups fresh spinach leaves
03 - ½ cup sun-dried tomatoes, chopped
04 - ½ cup olives, sliced

→ Cheese

05 - ½ cup crumbled feta cheese
06 - ½ cup shredded mozzarella cheese

→ Fats and Oils

07 - 2 tablespoons olive oil
08 - 1 tablespoon butter

→ Spices and Seasonings

09 - 1 teaspoon dried oregano
10 - 1 teaspoon garlic powder
11 - Salt and pepper to taste

# Step-by-Step Guide:

01 - Warm 1 tablespoon olive oil in a skillet over medium heat. Add fresh spinach and sauté until wilted, approximately 2 to 3 minutes. Remove from heat and set aside.
02 - Combine crumbled feta, shredded mozzarella, chopped sun-dried tomatoes, sliced olives, and sautéed spinach in a bowl. Season with oregano, garlic powder, salt, and pepper. Mix thoroughly.
03 - Evenly spread a thin layer of butter on one side of each bread slice. This will serve as the exterior of the sandwiches.
04 - Place the bread slices butter side down and spread the cheese and spinach mixture evenly over 4 slices. Top with remaining bread slices, butter side up, to form sandwiches.
05 - Add remaining 1 tablespoon olive oil to a large non-stick skillet and heat over medium flame.
06 - Cook sandwiches in the skillet for 3 to 4 minutes per side until bread is golden brown and cheese has melted.
07 - Remove sandwiches from skillet and allow to rest for 1 to 2 minutes before slicing in half. Serve immediately to enjoy fresh Mediterranean flavors.

# Additional Notes:

01 - Using stale or day-old bread improves grilling by preventing sogginess.
