Evenly spread a thin layer of butter on one side of each bread slice. This will serve as the exterior of the sandwiches.

Place the bread slices butter side down and spread the cheese and spinach mixture evenly over 4 slices. Top with remaining bread slices, butter side up, to form sandwiches.

Add remaining 1 tablespoon olive oil to a large non-stick skillet and heat over medium flame.
