Pat pork shoulder steaks dry with paper towels. Evenly season all sides with salt, black pepper, smoked paprika, garlic powder, and onion powder.

Select Sauté mode on the Instant Pot and heat olive oil. Sear pork steaks for 2 to 3 minutes per side in batches as needed. Cancel sauté mode when done.

Pour chicken broth or water into the pot to deglaze and add moisture.

Secure lid and set valve to Sealing. Pressure cook on High for 60 minutes.

Allow natural pressure release for 15 to 20 minutes, then perform quick release to release any remaining pressure.

Use two forks to shred pork. Drain excess liquid, toss meat with barbecue sauce if desired, and serve immediately.
