01 - 1 tablespoon avocado oil or olive oil
02 - 1 yellow onion, diced
03 - 454 grams ground turkey
04 - 1 red bell pepper, chopped
05 - 4 cloves garlic, minced
06 - 3 tablespoons chili powder
07 - 480 millilitres chicken broth
08 - 240 millilitres salsa
09 - 110 grams uncooked white rice
10 - 1 can (425 grams) black beans, drained
11 - 1 can (198 grams) diced green chilis
12 - 1 teaspoon sea salt, or to taste
13 - 340 grams grated Colby Jack cheese

14 - 1 ripe avocado, sliced
15 - 3 stalks green onion, chopped
16 - 120 millilitres sour cream
17 - 120 to 240 millilitres salsa

# Step-by-Step Guide:

01 - Preheat oven to 190°C. Lightly coat a 33 x 23 centimetre casserole dish with cooking spray.
02 - Heat oil in a large skillet over medium-high heat. Sauté diced onion until softened, 3 to 5 minutes. Add ground turkey and break apart with a spatula. Cook until mostly browned with some pink remaining. Season lightly with sea salt.
03 - Transfer bell pepper, minced garlic, chili powder, chicken broth, salsa, uncooked rice, drained black beans, green chilis, and sea salt to the prepared casserole dish. Mix thoroughly to combine.
04 - Fold in the cooked turkey and onion mixture. Sprinkle grated Colby Jack cheese evenly over the top.
05 - Cover the dish tightly with aluminum foil. Bake for 45 minutes.
06 - Remove foil and set oven to high broil. Broil 5 to 8 minutes until cheese is bubbling and lightly golden. Allow to cool slightly before serving to let the liquid absorb.
07 - Serve casserole hot with sliced avocado, chopped green onion, sour cream, and additional salsa as desired.
