Set the oven to 200°C and line a large baking sheet with parchment paper or lightly grease it.

Pat the chicken dry. In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken with olive oil, then coat evenly with the seasoning blend.

In a large bowl, toss the halved potatoes with olive oil, minced garlic, grated Parmesan, salt, and black pepper until well coated.

Place the seasoned chicken on one side of the prepared sheet. Spread the potatoes on the other side in a single layer for even roasting.

Roast in the preheated oven for 25–30 minutes, flipping the potatoes halfway, until the chicken reaches an internal temperature of 74°C.

Sprinkle extra Parmesan over the chicken and potatoes in the last 5 minutes of cooking and broil briefly to achieve a golden crust.

Remove from oven, scatter chopped parsley over the top, and serve hot.
