# What You'll Need:

→ Chicken

01 - 4 boneless, skinless chicken breasts or thighs
02 - 1 teaspoon Italian seasoning
03 - 0.5 teaspoon smoked paprika
04 - 0.5 teaspoon salt
05 - 0.25 teaspoon ground black pepper
06 - 1 tablespoon olive oil

→ Potatoes

07 - 680 grams baby Yukon Gold or red potatoes, halved
08 - 3 tablespoons olive oil
09 - 4 garlic cloves, minced
10 - 35 grams grated Parmesan cheese
11 - 0.5 teaspoon salt
12 - 0.25 teaspoon ground black pepper

→ Garnish

13 - 1 tablespoon chopped fresh parsley
14 - Additional grated Parmesan cheese, for finishing

# Step-by-Step Guide:

01 - Set the oven to 200°C and line a large baking sheet with parchment paper or lightly grease it.
02 - Pat the chicken dry. In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken with olive oil, then coat evenly with the seasoning blend.
03 - In a large bowl, toss the halved potatoes with olive oil, minced garlic, grated Parmesan, salt, and black pepper until well coated.
04 - Place the seasoned chicken on one side of the prepared sheet. Spread the potatoes on the other side in a single layer for even roasting.
05 - Roast in the preheated oven for 25–30 minutes, flipping the potatoes halfway, until the chicken reaches an internal temperature of 74°C.
06 - Sprinkle extra Parmesan over the chicken and potatoes in the last 5 minutes of cooking and broil briefly to achieve a golden crust.
07 - Remove from oven, scatter chopped parsley over the top, and serve hot.

# Additional Notes:

01 - For even crispness, arrange potatoes in a single layer without overlapping.
02 - Use a kitchen thermometer to ensure the chicken is fully cooked.
