Preheat oven to 425°F and line a large baking sheet with parchment paper.

Separate biscuits and roll each into a small rope; cut each rope into 4 equal pieces to form bites.

Bring a large pot half-filled with water to a rolling boil, then stir in ¼ cup baking soda until dissolved.

Gently drop dough pieces into boiling baking soda bath and boil each side for about 15 seconds. Remove with a slotted spoon and transfer to baking sheet.

Whisk egg and water, brush over bites, then immediately sprinkle coarse salt on top.
