Crock Pot Fiesta Chicken (Printable Version)

Tender, slow-cooked chicken with ranch, taco spices, corn, beans, and cream cheese for bold Mexican flavors.

# What You'll Need:

→ Main Ingredients

01 - 900 g boneless, skinless chicken breasts
02 - 1 cup diced yellow onion
03 - 1 packet ranch seasoning mix
04 - 1 tablespoon taco seasoning
05 - 425 g canned black beans, drained and rinsed
06 - 425 g canned whole-kernel corn, undrained
07 - 410 g canned diced tomatoes, undrained
08 - 115 g canned diced green chilies, drained
09 - 1 teaspoon ground black pepper
10 - 2 teaspoons minced garlic
11 - 225 g cream cheese

# Step-by-Step Guide:

01 - Spread diced onion evenly across the base of a 6-litre slow cooker, and arrange chicken breasts on top.
02 - Sprinkle ranch seasoning and taco seasoning over the chicken. Pour in black beans, corn, diced tomatoes, and diced green chilies. Season with black pepper and add minced garlic. Place cream cheese on top of the mixture.
03 - Cover and cook on high for 2–3 hours or on low for 4–6 hours until chicken is fully cooked and tender.
04 - Once cooking is complete, shred the chicken directly in the slow cooker using two forks. Stir well to integrate all ingredients until creamy and combined.
05 - Portion onto rice, tortillas, or nachos as desired and serve immediately.

# Additional Notes:

01 - Use chicken breasts of similar size for even cooking.
02 - For a spicier flavour, consider substituting the green chilies with diced fresh jalapeños or chipotle peppers in adobo sauce.
03 - A hand mixer on low speed can quickly shred the chicken directly in the slow cooker.
