Pat chicken breasts dry. Season both sides evenly with salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Place chicken breasts in the skillet and cook for 5–6 minutes per side, or until golden brown and thoroughly cooked. Transfer chicken to a plate and set aside.

Reduce heat to low. Add minced garlic to the same skillet and sauté for 30 seconds, stirring constantly until fragrant.

Pour cream into the skillet, stirring to deglaze the pan. Add Italian seasoning and grated parmesan cheese, whisking until the sauce is smooth and begins to thicken.

Add chopped spinach, if using, and simmer gently for 2–3 minutes until wilted.

Return chicken breasts to the skillet. Spoon the garlic sauce generously over the chicken. Simmer for 1 minute to heat through, then remove from heat.

Serve immediately with your choice of pasta, roasted vegetables, or mashed potatoes.
