Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned and cooked through, stirring occasionally. Drain excess grease.

Stir in Italian seasoning and paprika. Add cubed sweet potato, minced garlic, red pepper flakes, and tomato paste. Mix thoroughly to combine.

Pour 6 cups of water into the pot. Bring mixture to a boil, stirring to dissolve tomato paste. Reduce heat to maintain a simmer, cover with a lid, and cook until potatoes are tender, approximately 15 minutes.

Add tortellini to the pot, cover, and cook over medium heat according to package instructions, about 10 minutes, until the pasta is tender.

Stir in fresh spinach until just wilted. Remove pot from heat. Add heavy cream and stir to combine. Adjust seasoning with salt and additional red pepper flakes if desired. Garnish with fresh thyme before serving.
