Creamy Roasted Garlic Tomato Soup (Print-Friendly Version)

01 - 1.5–1.8 kg ripe organic tomatoes, cut into wedges
02 - 2 whole garlic bulbs

03 - 0.5 medium onion, chopped
04 - 1 tablespoon extra virgin olive oil
05 - 360 ml organic heavy cream
06 - 480 ml organic vegetable stock
07 - 4 tablespoons organic tomato paste
08 - 1 teaspoon sea salt, plus more to taste
09 - 1 teaspoon On Everything All-Purpose Blend
10 - 0.5 teaspoon smoked paprika

# How to Prepare:

01 - Preheat oven to 200°C. Arrange tomato wedges and whole garlic bulbs on a baking tray. Drizzle lightly with olive oil and season with salt. Roast for 30–35 minutes until tomatoes are caramelized and garlic is soft.
02 - In a medium Dutch oven over medium-high heat, heat olive oil. Add chopped onion and sauté for 1–2 minutes until translucent and fragrant.
03 - Transfer sautéed onions, roasted tomatoes, and squeezed garlic cloves into a high-speed blender. Add tomato paste and vegetable stock. Blend on high until smooth, reserving a few roasted tomatoes for garnish if desired.
04 - Pour the blended mixture back into the Dutch oven. Stir in heavy cream, sea salt, all-purpose blend, and smoked paprika. Bring to a boil for 1–2 minutes, then reduce heat to low and simmer for 5–6 minutes to thicken.
05 - Remove soup from heat. Ladle into serving bowls, garnish with reserved roasted tomatoes, and serve immediately with grilled cheese if desired.

# Additional Information:

01 - For a vegan version, substitute heavy cream with full-fat coconut cream or coconut milk. Use dairy-free cheese for the grilled cheese accompaniment if serving.
02 - Leftovers can be refrigerated in a sealed container for up to 3 days or frozen for 4–6 months. To reheat, thaw if frozen, then warm gently on the stove.
03 - To create the all-purpose blend at home, combine equal parts sea salt, black pepper, garlic powder, dried oregano, dried thyme, and dried parsley.
