In a large bowl, whisk eggs, heavy cream, salt, and black pepper until well combined.

Melt 1 tablespoon butter in a large skillet over medium heat. Add the egg mixture and gently scramble until just set. Remove from the skillet and set aside.

In the same skillet, cook bacon over medium-high heat until crisp. Transfer bacon to paper towels to drain, then cut each slice into four pieces.

Slice the entire loaf of Hawaiian rolls horizontally without separating the individual rolls. Place bottom halves in the prepared baking dish and evenly sprinkle with 1 cup cheddar cheese.

Distribute scrambled eggs evenly over the cheese layer, add bacon pieces on top, and sprinkle with remaining 1 cup cheddar cheese. Cap with the top halves of the rolls.

In a small bowl, combine 1 tablespoon melted butter with ranch dressing mix. Brush mixture over the tops of the rolls.
