Whisk egg, vanilla extract, whole milk, and melted butter in a separate bowl until fully combined.

Pour wet ingredients into dry mixture and whisk gently just until combined; avoid overmixing to keep pancakes tender.

Heat a large skillet or griddle over medium-high heat until hot. Add 1 tablespoon butter and allow to melt for pan greasing.

Using a 1/3 cup measuring cup, pour batter onto the skillet. Optionally, sprinkle additional chocolate chips on top. Cook until bubbles form and edges are firm, about 2 to 3 minutes. Flip and cook for another 1 to 2 minutes until golden brown.

Transfer cooked pancakes to a plate. Repeat with remaining batter, greasing pan as needed. Serve warm with preferred accompaniments.
