# Step-by-Step Guide:

01 - In a small saucepan over medium heat, melt the butter. Add chopped apples, brown sugar, cinnamon, and nutmeg if using. Cook, stirring occasionally, until apples soften, approximately 5 to 7 minutes. Stir in the cornstarch mixture and cook for another 1 to 2 minutes until thickened. Remove from heat and allow to cool.
02 - Combine cream cheese, granulated sugar, and vanilla extract in a bowl. Mix until smooth and free of lumps. Refrigerate briefly to firm the mixture.
03 - Roll out dough into circles measuring 10 to 13 cm in diameter. Place a spoonful of cheesecake filling onto the center of each circle, followed by a spoonful of apple filling. Fold the dough over to form half-moon shapes and seal edges by pressing with a fork, moistening edges with water or beaten egg to secure.
04 - Heat vegetable oil to 175°C (350°F) until 2.5 to 5 cm deep in a frying pan. Fry pies in batches until golden brown, about 2 to 3 minutes per side. Drain on paper towels.
