01 -
Heat the vegetable oil in a skillet over medium heat. Add the diced onion and cook for 5 minutes, stirring frequently until the onion is soft and translucent.
02 -
Pour the beaten eggs into the pan with the onions. Stir gently and frequently, forming large, tender curds. Cook until the eggs are just set and no liquid remains. Season with sea salt and freshly ground black pepper. Remove from heat to cool slightly.
03 -
On a lightly floured surface, roll each biscuit round into a circle approximately 1/8 inch thick.
04 -
Spoon a portion of the egg-onion mixture onto the center of each dough round. Top with shredded cheddar and crumbled bacon, ensuring you leave the edges clear.
05 -
Moisten the edges of each dough round with water. Fold into a half-moon shape and press to seal firmly. Crimp the sealed edge with a fork for a tight closure.
06 -
Spray the air fryer basket with nonstick spray or brush with vegetable oil. Arrange prepared hand pies in a single layer, leaving space between each. Lightly mist the tops with spray.
07 -
Set the air fryer to 350°F. Air fry for 5 minutes, then carefully flip each pie. Continue cooking for another 4 minutes until golden and crisp. Work in batches if necessary.
08 -
While the pies cook, melt the unsalted butter and stir in onion powder and dried parsley. Once the pies are golden and cooked through, immediately brush the tops with the seasoned melted butter.
09 -
Return pies to the air fryer for 1 additional minute to set the flavors. Serve warm, optionally accompanied by ketchup or salsa.
