Preheat oven to 175°C. Lightly coat an 20 x 20 cm baking dish with coconut oil cooking spray.

In a large mixing bowl, whisk together the Greek yogurt, eggs, honey or maple syrup, oat flour, and vanilla extract until the mixture is smooth and well combined.

Gently fold in the mixed fresh berries, taking care not to crush them.

Pour the batter into the prepared baking dish and spread evenly. Optionally, scatter a few additional berries over the surface.

Bake for 35–40 minutes, or until the center is fully set and the top is slightly golden.

Remove from the oven and allow to cool completely before slicing. Serve with additional yogurt, honey, and fresh fruit if desired.

To store, wrap cooled portions tightly in plastic wrap and refrigerate for up to 3 days.
