Preheat oven to 375°F (190°C). Generously coat a muffin tin with nonstick cooking spray.

Peel and finely dice the apples. In a small bowl, combine diced apples, ground cinnamon, nutmeg, brown sugar, and lemon juice. Mix until evenly coated.

Remove cinnamon rolls from packaging. Using a rolling pin or your fingers, flatten each cinnamon roll into a disk approximately 7–8 cm in diameter.

Fit each flattened cinnamon roll disk into a muffin cup, pressing gently to form a shallow well.

Fill each cinnamon roll cup with a generous spoonful of prepared apple mixture. Gently press filling to compact it slightly.

Transfer muffin tin to preheated oven and bake for 13–15 minutes or until cinnamon rolls are golden brown and the apple filling is bubbling.

Remove from oven and allow to cool in tin for 5 minutes. Drizzle reserved icing over warm apple cinnamon rolls before serving.
