01 -
Set oven to 350°F (177°C) to preheat.
02 -
Place pecan pieces in a small pan over medium heat and toast until aromatic. Allow to cool.
03 -
Peel, core, and chop apples into 1/2-inch chunks.
04 -
In a mixing bowl, cream together butter and sugar until well blended. Beat in the egg until the mixture becomes light and fluffy.
05 -
Add flour, baking powder, salt, and cinnamon to the creamed mixture. Mix gently until just combined.
06 -
Gently fold chopped apples and toasted pecans into the batter until evenly distributed. The mixture will be sticky and moist.
07 -
Spread batter evenly in a buttered or parchment-lined 8x8-inch baking dish.
08 -
Bake for 30–45 minutes, or until the crust turns golden brown and a toothpick inserted in the center comes out mostly clean. Typical bake time is about 35 minutes.
09 -
Remove from oven and cool in the pan for 15 minutes. Cut into squares and serve, ideally with ice cream if desired.
