In a large mixing bowl, combine self-raising flour and sweetened Greek yogurt. Stir until a soft dough is formed. Transfer to a lightly floured surface and knead gently by hand until the dough is smooth, with no dry patches visible. If dough feels sticky, lightly oil your hands for easier handling.

Divide dough evenly into two. Roll each portion into a log approximately 1 inch in diameter. Cut each log into small pieces weighing about 1/3–1/2 ounce (8–12 grams) each. Gently roll each piece between your palms to create smooth, round balls.

Set air fryer to 356°F (180°C) and preheat for 5 minutes. Lightly brush the air fryer basket with oil to prevent sticking.

Toss shaped dough balls in melted butter for a thin coating. Arrange them in the prepared air fryer basket with space between each to allow for expansion. Air fry for approximately 5 minutes or until puffed and golden brown. Note that browning may be uneven due to air fryer circulation.

While still warm, brush donut bites once more with melted butter. Immediately roll each in a mixture of granulated sugar and ground cinnamon so the coating adheres.
