Set air fryer to 205°C and preheat for 5 minutes.

Peel, core, and chop the apples. Toss with lemon juice and melted butter. Set aside.

In a bowl, whisk together gluten-free flour blend, brown sugar, baking powder, salt, and pumpkin spice.

In a separate bowl, gently beat the eggs. Add vanilla and fold in the apple mixture.

Add dry ingredients to wet ingredients. Stir until just combined. If batter is too thick, add a splash of milk to loosen.

Spoon heaping portions of batter onto the preheated air fryer basket lined with parchment. Lightly spray tops with coconut oil spray.

Cook fritters for 3 to 4 minutes per side until golden and set. Transfer to a cooling rack and allow to cool.
